After School Strawberry Toasts Recipe

It’s back-to-school time and with these six fresh strawberry toasts recipe these after school snacks will surely please even your pickiest easier. Not only are these toasts great for little ones but pretty darn awesome for grown-ups too.

With school in full swing I have been the queen of toasts. It’s a great snack after school and before I take my kids to their practices or games. I’m sure you’ve seen the avocado toast obsession; well I think we need to start the strawberry toast craze.

Strawberries are naturally sweet but low in sugar, which is a win-win for everyone. Strawberries are easy to prepare, available year-round, and deliver exceptional nutrition and health benefits.

The best part is that if you can work a toaster you can make these satisfying snacks for back-to-school or better yet, let your children make them themselves. I have a feeling you might have some of these ingredients in your fridge or be inspired to make your own creations.

Avocado + Strawberries + Queso Fresco + Olive Oil

This combo is my favorite – I can seriously eat avocado and strawberries with every meal. This toast is topped with slices of creamy avocados, sweet strawberries, salty crumbled queso fresco, and drizzled with olive oil.

Berries + Basil/Mint + Cream Cheese

Cream cheese, strawberry slices, and blackberries topped with basil or mint leaves is a lovely combo.

Strawberries + Goat Cheese + Pomegranate + Balsamic

This one is my daughter’s favorite. She loves exotic flavors and the way the tangy, slightly salty goat cheese works with the balsamic-coated strawberries and pomegranate seeds on the crunchy, toasted bread is a thing of beauty.

Cottage Cheese + Strawberries + Walnuts + Honey

If you are not a fan of cottage cheese substitute with ricotta cheese. It’s a simple and satisfying combo and deliciously sweet with a drizzle of honey.

Mango + Strawberries + Mozzarella + Tajin

I can’t have mango without a sprinkle of Tajin. This is my strawberry toast of choice when I’m feeling homesick.

Strawberries + Almond Butter + Sesame Seeds

This one is my son’s favorite — a protein packed afterschool snack perfect before he heads to football practice. The almond butter will fill you up and keep you satisfied, loaded with vitamin C packed strawberry slices, and the sesame seeds are high in calcium.

Strawberry and Passion Fruit Caipirinha

I have a love affair with a perfectly muddled mojito and the first time I ever tasted a caipirinha it was love at first sip. Pronounced ky-pee-REE-nya, the name makes me wanna shake my tail feathers at carnaval.

A mojito and a caipirinha are very similar. A mojito includes mint leaves and instead of rum the classic Brazilian caipirinha is made with cachaça. Cachaça is a distilled spirit made from sugarcane juice and is the most popular distilled spirit in Brazil.

A traditional caipirinha is made with limes without mint, but because I love tropical flavors and mint this caipirinha is made with strawberries, passion fruit, mint leaves, and limes. I also added coconut juice, which is slightly sweet and very refreshing. Topped with club soda this cocktail is fun to make and easy to drink.

You might want to serve a spoon with this cocktail so you can eat the remaining cachaça soaked fruit. Although strawberries are available year-round, peak season for California strawberries starts in March and ends in late fall, making this drink perfect for a sultry summer fiesta.

If you haven’t tasted a passion fruit beverage or cocktail, you’re missing out. Passion fruit seeds make a great base in cocktails. They have a sweet and aromatic taste and are delicious paired with strawberries.

Strawberry and Passion Fruit Caipirinha

Serves: Makes 2 drinks
 
Ingredients
  • 1 lime, cut into wedges
  • 10 strawberries, sliced
  • 12 mint leaves
  • 2 tablespoons granulated sugar
  • 1 cup coconut juice
  • 1 passion fruit, halved
  • 3 ounces cachaça
  • 4 ounces club soda, chilled
  • Crushed ice
Instructions
  1. Divide lime wedges, strawberries, mint leaves, and sugar between 2 glasses and muddle.
  2. Add coconut juice and scoop the passion fruit pulp with seeds into the glasses. Add cachaça and top off with club soda, ice, and stir.
