Strawberry Horchata

Looking for a unique, refreshing beverage using strawberries? Try this strawberry horchata recipe from Mama Latina Tips. Not only is it yummy and satisfying, it’s an easy way to incorporate a serving of 8 strawberries into your diet.

Plus, since California strawberries are available all year long, you can make this throughout the year. Try it out!

Strawberry Horchata
Serves: 8 cups
  • 2 tablespoons rice flour or brown rice flour
  • 1 small cinnamon stick (or about 1-1/2 tsp ground cinnamon)
  • 1 cup almond beverage
  • ½ teaspoon vanilla extract
  • 1¼ pounds of strawberries, plus a few extra for garnishing, washed and hulled
  • 6 cups of water
  1. Mix rice flour, cinnamon stick and almond beverage in a blender or food processor until cinnamon is completely pulverized. Pour into a small pot and warm over medium-high heat until it starts to boil. Add vanilla extract, turn the heat off and set aside.
  2. In a food processor or blender, combine strawberries (remember to leave a few extra for garnishing), condensed milk and one cup of water. Mix until well integrated and as smooth as possible.
  3. Strain rice flour mixture into the water, pour the strawberry-condensed milk mixture and mix well. Adjust for sweetness.
  4. Either cut in half or chop strawberries to garnish the glasses.
  5. Chill or pour over ice and serve.

Straw-BERRY Good Smoothie

  • 1 cup California strawberries
  • 1 cup low fat milk
  • 3 tablespoons frozen grape juice concentrate
  • ½ cup low fat vanilla or blueberry yogurt
  1. Place all ingredients in a blender and puree until smooth.
  2. Garnish with sliced strawberries and a mint sprig, if desired.

Strawberry Mango Smoothie, Thai Style
Serves: 2
  • 1 cup frozen California Strawberries
  • ½ cup California strawberry juice
  • ¾ cup frozen mango cubes
  • ½ cup yogurt
  • 4 Thai basil leaves
  • ¼ cup cream of coconut
  • Pinch chile powder
  • ½ cup ice
  • Skewered fresh California strawberry and fresh mango cube for garnish
  1. Combine all the ingredients except the garnish in a blender and puree until smooth.
  2. Pour into a highball glass and garnish with the fruit skewer.

  • 1 cup grape juice or pomegranate juice
  • 4 lemon peels
  • 5 cups fresh strawberries, stemmed
  • 6 to 8 fresh mint leaves
  • 1 medium fresh beet, cooked or canned
  • 1 large carrot, cut into chunks
