I'm Paula, an Indiana farm girl turned Texas city slicker, better known in the blogosphere as the "Salad in a Jar" lady. I started blogging a couple years ago so I could share some of the unusual but healthy ways I control my weight. As a home economist (Family Life Specialist these days), I love thinking about nutrition and good diets full of fruits and vegetables. But life would be terribly dull without the occasional indulgence. I've tried it. Going without sugar is a very unsocial habit.
A big part of my philosophy embraces the idea that we usually eat what is easiest when we are tired, busy, and/or stressed so it's best to make healthy food convenient. Appliances such as the bread machine, a microwave, and a food processor are major players in my recipes because they help me cook fast without sacrificing taste when used correctly. Doing everything by hand (e.g. kneading bread dough) is fine when there's lots of time, but most of us have jobs and families. I know. I'm an ultrasound tech by day with a husband, two married sons of my own and the blessing of a grandson.
