I love scones and find myself baking them a lot - even sometimes before work - just because they are so easy to make. Is it just me, or do you find that most people you know don't bake scones very often? I'm not sure why, because I think they're a lot easier than baking muffins or cookies.
Take these scones for example: they take only a few minutes to prepare before they're baking in the oven and filling your entire home with the combined warm scent of butter, vanilla and berries.
The reason they only take a few minutes is because they don't have to be poured into a pan, rolled out, or molded into any particular shape. All you have to do is drop big clumps of the dough onto a baking sheet. You don't even need to grease or line the pan!
As if I haven't raved enough about these scones, I wanted to add that while they may be a little on the rich side - they are packed with nutrients from the whole grain flour - and the berries. Oh, did I mention that they are absolutely delicious? They are mildly sweet, filled with luscious summer berries, and defintiely melt in your mouth.

Summer Berry Drop Scones
Ingredients
2 cups white whole wheat flour (or all purpose flour)
1 cup fresh strawberries, diced
1/2 cup fresh blueberries
1 stick butter, chilled and cut in small pieces
1/2 cup heavy cream
1/2 cup sugar
1 teaspoon vanilla extract
1 tablespoon baking powder
a pinch of salt
Directions
In mixing bowl, whisk together flour, sugar, baking powder and salt.
Add flour mixture to food processor with butter and pulse about 20 times until butter is incorporated.
Pour mixture back in mixing bowl and add 1/2 the cream, mix gently. Add the vanilla extract and remaining cream; continue to stir until well blended.
Add berries to the dough mixture and gently stir until the berries are evenly distributed.
With spoon, drop onto baking sheet, spaced about two inches apart.
Bake for 20 - 25 minutes, until tops are light, golden brown.
