Homemade Creamy Strawberry Froyo

This low-fat recipe makes summer the perfect time to get your ice cream maker out of hibernation.

Ingredients

2 1/4 cups lowfat plain or vanilla Greek Yogurt
1/1/2 cups fresh strawberries, chopped
1/2 cup sugar
1 teaspoon vanilla extract
1/8 cup water

Preparation

In small saucepan, bring strawberries, sugar and water to a boil.

Turn heat down and let simmer for about 10 minutes. Stir every few minutes and mash lightly with fork once berries begin to soften.

In blender, puree mixture. Strain any excess liquid out if necessary. Pour thickened mixture in bowl and refrigerate until cool and ready to use.

In mixing bowl, add yogurt and vanilla extract. Add strawberry mixture after chilling, and stir until well-blended.

Cover and refrigerate until ready to use.  Many recipes call for lengthy refrigeration times, but for this recipe, I simply waited until the mixture was chilled and the results were perfect! I've found that to be the case with most of my froyo recipes.

Add blended mixture to ice cream or frozen yogurt machine (according to manufacturer directions).

Serve as is, or add your favorite topping.
