Strawberry Smoothie Parfait

This Strawberry Smoothie Parfait is just as beautiful as it is delicious thanks to creator Matt Robinson over at @realfoodbydad.

To make this recipe super simple, you can use store bought granola like we did; but if you’d like to add an additional homemade touch with even more strawberry flavor, check out our Farmer’s Wife Strawberry Granola Recipe here. We used low-fat vanilla yogurt for our parfaits, but feel free to use whatever yogurt you prefer!

Ingredients

Strawberry Smoothie Layer

  • 1 lb. fresh California strawberries
  • 3 small ripe bananas
  • 1 cup low-fat vanilla yogurt

Pineapple Smoothie Layer

  • 1 pound of frozen pineapple
  • 3 small ripe bananas
  • 1 cup low-fat vanilla yogurt

Toppings

  • Fresh strawberries
  • Whipped cream
  • Oats & Honey Granola

Instructions

To make Strawberry Layer:

  • Place all ingredients in a blender and process until smooth.

To make Pineapple Layer:

  • Place all ingredients in a blender and process until smooth.

To Assemble and Serve:

  • Alternate layering the strawberry and pineapple smoothies in a parfait glass. Finish with toppings, about 1-2 tablespoons of each.
