Smoky Strawberry Gazpacho

Servings 6 cups

Ingredients

  • 1 pound strawberries hulled
  • 3 celery stalks sliced
  • 1 small red onion sliced
  • 1 cucumber peeled and sliced
  • 1 tablespoon minced garlic
  • 1 cup 100% tomato juice
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 2 teaspoon sea salt

Instructions

  • Blend all the ingredients together in a high-powered blender until slightly chunky. The longer it sits, the more the flavors develop.
