Bake a batch of sweet tortilla shells and set out a dessert taco bar! These sweet tacos make a great snack or dessert.
Sweet and crispy taco shells are dusted with cinnamon-sugar and dolloped with a sweet avocado vanilla yogurt studded with chopped strawberries to resemble “guacamole.” Fill tacos with tropical and colorful fruits and berries and garnish with coconut flakes to resemble “cheese.” Recipe by Yvette Marquez of Muy Bueno.

Ingredients
Taco Shells:
- 3 Tbsp granulated sugar
- 1 Tbsp ground cinnamon
- 2 Tbsp olive oil
- 6 Mission Street Tacos Flour Tortillas
Avocado Vanilla Yogurt:
- 1 cup non-fat vanilla yogurt
- 1 large avocado peeled and seeded
- 1 Tbsp honey
- ½ cup strawberries chopped
Toppings:
- Strawberries sliced
- Pineapple wedges
- Kiwi sliced
- Mango chopped
- Blueberries
- Coconut flakes
- Mint leaves
Instructions
Taco Shells:
- Preheat oven to 400°F.
- Stir together sugar and cinnamon in a small bowl and set aside.
- Brush olive oil evenly on both sides of tortillas.
- To assemble the shells, flip over a muffin pan and arrange the shells so they are resting between each cup.
- Bake tortillas in preheated oven until tortillas are lightly browned, about 15 to 20 minutes. Sprinkle shells with cinnamon sugar mixture while warm.
Avocado Vanilla Yogurt:
- Place the yogurt, avocados, and honey in a blender or food processor. Mix until smooth. Fold in strawberries.
Assemble:
- Spoon avocado yogurt into each taco shell, and garnish with fruits and berries, and coconut if using.
