  • 1 ½ cups fresh strawberries
  • 1 cup gluten-free oats
  • ½ cup coconut flour
  • ½ cup sunflower seeds
  • 2 tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 Tbsp coconut oil
  • ½ cup unsweetened shredded coconut
  • 1 Tbsp honey Optional


  • Add strawberries, oats, flour, and sunflower seeds to a food processor and pulse until mixture crumbles. While pulsing, add the lemon juice and vanilla extract and continue pulsing until a fine crumble forms.
  • Add coconut oil and honey, a teaspoon at a time, until paste-like mixture forms.
  • Form paste into 24 balls and roll each ball in coconut to coat.
  • Keep refrigerated up to one week.
